The "Picual" variety

A rustic variety due to its adaptation to different weather and soil conditions; in particular it is deemed to tolerate cold weather conditions, salinity and excessive humidity in the soil. However, it is sensitive to drought and to chalky soils. 

It comes into production very quickly. Its flowering season is average and it is considered to be self-reproducing. Its fruit also ripen early and they have a low resistance to detachment, which aids mechanical harvesting.

It is a highly appreciated variety due to its constant and high productivity, its high degree of yield and its ease of cultivation. The oil stands out for its high stability rate, which entails a high resistance to “rancidity”, due to a very high percentage of monounsaturated oleic acid, which is important for preventing cardiovascular diseases.

The oils in the SCA Santa María are prepared in a completely mechanical way, using a natural decanting system and minimum temperatures, without the intervention of any chemical products.

The Oleobercho Virgin Olive Oilis a genuine, dense and bright oil, typical of the Sierra Mágina area. It stands out due to its fruity flavour, slightly bitter and spicy, which causes a pleasant feeling of corpulence on the palette owing to its density.

The oil, which appears as a mixture of a range of greens and old gold yellow, is excellent for using raw in salads, on bread or accompanied by ham or cheese. In cooking, it is perfect in all kinds of stews, sauces and fried dishes.
